Sunflower Seed Toast

This is one of my favorite quickie snacks, which I often eat for breakfast. I love the crunch of the warm, toasted sunflower seeds on a slice of chewy whole-grain bread. The next time you need a snack and feel like having something different, give this recipe a try. If you expect friends or family members to come sniffing over your shoulder, you can always prepare additional slices.

Ingredients

  • 1 slice Whole-grain sandwich bread
  • 1 tsp Margarine (or enough to spread thinly over your slice of bread)
  • 1 slice Vegan cheese
  • 1 tbsp Raw unsalted sunflower seeds
  • A sprinkle of seasoning salt

Instructions

  1. Spread a thin layer of margarine onto the slice of sandwich bread.
  2. Lightly sprinkle seasoning salt over the surface of the bread.
  3. Center the "cheese" on the bread slice.
  4. Spread the sunflower seeds evenly over the cheese. I like to really pack them on there, which may turn out to be more than just one tablespoon.
  5. Toast the bread in a toaster oven until the sunflower seeds and the edges of the bread start to brown (or to taste).

Tips

  • I like to use Tofutti soy mozzarella-flavored slices for this recipe.
  • You can skip the cheese slice entirely if you want to, but you'll have to watch out for rolling sunflower seeds: the cheese helps to hold them on the bread.
  • I like to use Spike seasoning salt, but just about any salty spice mix will do. Another excellent alternative is to spread a little Vegamite or Marmite over the margarine instead of the seasoning salt.
