Vegan Hot Cocoa

There's something about a wet, wintry day that makes you crave something warm and sweet to drink. This vegan cocoa fits the bill nicely. Although you can make this recipe any time of year, it works best as a mood lifter during those moments when you are staring out the window at the swirling snow. A steaming cup of hot cocoa between your hands warms your tummy and your spirits.

Ingredients

  • 1/2 cup Water
  • 1 tbsp Sugar
  • 2 tbsp Cocoa powder
  • 1/2 tsp Cinnamon powder
  • 1-1/4 cups Vanilla-flavored soy milk
  • dash of salt

Instructions

  1. In a small sauce pan, add all of the ingredients except the soy milk.
  2. Heat to a simmer on medium high heat. Stir frequently.
  3. Add soy milk and heat until hot, but do not allow to boil.

Tips

  • This recipe really benefits from the use of a rich soy milk like Vitasoy or Silk. The best we've found for cocoa is the refrigerated Silk, which has the most body of any soy milk we've tried.
  • We recommend the use of unrefined sugar (turbinado, raw sugar, etc.) with this recipe. Even the coarse varieties will dissolve quickly in the water.
